Organ. The kind you build a cathedral around it. With about 2500 keys, from which 5 are labelled "?" and nobody knows what they do, because nobody ever dared to press them. (someone DID press the key labelled "Vox Inferna". They had to build a new cathedral around the organ as result, never found more than a tooth from the unfortunate sod who pressed that key. "Mortis Aetherna" cannot be pressed normally, but it has a keyhole that unlocks it. The key is presumed lost.)

Flute. While not a woodwind, I had played a brass instrument in the past, the Trumpet. So, with that experience, I would think of the Flute, before a string instrument such as Violin or Guitar.
